
Green Chili Pork Loin
Today is a family reunion of biblical proportions. It’s my husband’s side of the family. It’s been years since the last one and I’m so looking forward to it.
I love this side of the family. So many colorful characters–all of them, the product of generations of Texas and Arizona cattlemen and cowboys.
We were instructed to bring “a dish” to share and so I pondered, what to bring, what to make? This is not an anemic gourmet crowd–for them, it’s all about comfort food, and troughs of it.
I finally decided on a giant bowl of Potato Salad (my Grandmother Martha’s recipe, which is the best…seriously it really is!), some awesome green chili (I bought the biggest pork loin I could find) and my famous Pico de Gallo. I was going to whip up some berry cobbler too, but my husband said: “Are you crazy? Are you going to cook for the whole clan?” Okay, so I went just a tad bit overboard, but I was having fun for crying out loud! My husband managed to talk me off the ledge. Indeed, I was in a cooking/baking frenzy–just happy as a little clam buzzing about the kitchen. See yesterday’s post.
Anyway, it’s almost time to head ’em up and move ’em out…
I’ll be taking my camera and tablet along so I can capture some pics for my next post.
